Diabetic Cheesecake
1 cup graham cracker crumbs
1/4 cup margarine or butter, melted
3 (8 oz.) containers low-fat yogurt, favorite flavor
2 tbl. suagr
3 tbl. cornstarch
1/2 tsp.vanilla extract
2 large eggs
Preheat oven to 425° F.
Toss together the graham cracker crumbs and margarine. Press the mixture into the bottom of a 9-inch deepdish pie pan. Or use a 9-inch deepdish low-calorie pie crust from your local supermarket as a shortcut.
Combine the yogurt, sugar, cornstarch, vanilla, and eggs in a large mixing bowl. Mix with a wire wip until well blended. Pour the batter into pan.
Bake for 50-60 minutes or 45 minutes in a gas stove. Cheesecake is ready when center is set, does not jiggle when edge of tin is touched. Don’t worry if the edges need to get a little brown in order to let the center set. Let cool completely on a wire rack. Store covered in the refrigerator.
