Hazelnut or Amaretto Cheesecake by Schmitty
1 cup ground toasted hazelnuts
2 tablespons butter, melted
4 8 ounce packages cream cheese
1 1/4 cups sugar
2 teaspoons vanilla
1/2 teaspoon almond extract
5 eggs
1/4 cup hazelnut liqueur or Amaretto
2/3 cup chopped toasted hazelnuts or almonds
1 cup whipping cream
2 tablespoons hazelnut liqueur or Amaretto
Stir together ground hazelnuts or almonds and butter. Press mixture onto bottom of a 9 inch springform pan.
In a large mixing bowl, combine cream cheese, sugar, vanilla and almond extract; beat until fluffy.
Add eggs and beat on low speed until just combined. Stir in 1/4 cup liqueur and chopped nuts of your choice.
Turn into prepared pan. Bake in a 350 degree oven for 1 hour or until center appears nearly set when shaken.
Cool for 15 minutes in pan on wire rack.
Loosen sides of pan. Cool for 30 minutes more.
Remove sides of pan. Cool.
Chill at least 4 hours.
Beat whipping cream with 2 tablespoon hazelnut liqueur or Amaretto.
Serve flavored whipped cream with cheesecake.
Makes 16 servings.
