Hilltop's Mocha Cheesecake

Chocolate Crust-whirl a handful of chocolate graham crackers in the food processor. Melt a little butter and press into 10" springform pan. Set aside.

Filling:
6 oz. semisweet chocolate
1 1/2 lbs. cream cheese
1/2 cup granulated sugar
2 large eggs
1 cup heavy cream
1 tsp. instant coffee crystals
1 tsp. vanilla


Preheat oven to 350. Melt chocolate in double boiler.

In a large bowl or Kitchenaid, beat together the cheese and sugar. Beat 10 minutes until very fluffy. Add eggs one at a time and beat 5 more minutes.

Pour melted chocolate slowly into the mixture, scraping sides and blending well. Mix in the rest and pour into crust.

Bake for 45 minutes, or until the edges puff slightly. Cool in the oven with the door cracked open.

Cool and spread with a cup or so of sour cream. Decorate the top with melted chocolate drizzled from a pastry bag or zip-lock bag.
