Cheesecake: Individual Frozen Peppermint Cheesecakes

Individual Frozen Peppermint cheesecakes

18 vanilla wafers
1 (8 oz) pkg cream cheese, softened
1 (14 oz) can sweetened condensed milk
1 cup crushed hard peppermint candy
3 drops red liquid food coloring
1 (8 oz) container frozen whipped topping, thawed and divided
Garnish: crushed hard peppermint candy


Place 1 vanilla wafer in each foil cupcake cup or paper lined muffin cup. Beat cream cheese at high speed with an electric mixer until creamy. Stir in condensed milk, crushed candy, and food coloring. Fold in 2 cups whipped topping.

Spoon peppermint mixture evenly into muffin cups; cover and freeze 2 hours or until firm. Dollop or pipe remaining 1 cup whipped topping evenly on tops of frozen cheesecakes. Garnish if desired.



Frozen peppermint cheesecake:

Combine 40 finely crushed vanilla wafers, 1/4 cup powdered sugar, 1/4 cup melted butter or margarine; firmly press onto bottom and 1 inch up sides of a 9 inch springform pan. Chill.

Proceed with recipe as directed. Pour peppermint mixture into prepared crust. Cover and freeze 4 hours. Spread remaining 1 cup whipped topping evenly over cheesecake. Garnish if desired. Makes 10 servings..Chill 4 hrs.
