Key Lime Cheesecake

Crust-
1 cup graham cracker crumbs
2 Tblsp butter, softened
1/2 cup sugar

Filling -
3 (8oz) packages cream cheese, softened
3/4 cup sugar
1 cup sour cream
3 eggs
3 Tblsp flour
1 cup Key lime juice
2 tsp vanilla

Topping -
1 cup sour cream
1/2 cup sugar
2 tsp vanilla

Mix together graham cracker crumbs, butter and sugar. Pack into the bottom or a springform pan to make a crust. To prepare filling, beat cream cheese until soft. Continue beating and mix in sugar and sour cream. Beat in eggs one at a time.

Mix in flour slowly. Add lime juice and beat until smooth. Blend in vanilla. Pour into springform pan. Bake at 350 for 15 minutes. Lower temperature to 300 and bake another 55 minutes.

Remove from oven carefully and cool. Make topping by mixing together sour cream, sugar and vanilla. Spread over cooled cake. Bake at 400 for 10 mintues. Refrigerate 24 hours before serving.

Yield: 12-16 servings
