Mini Cheesecakes
12 vanilla wafers
2 (8oz) packages cream cheese (softened)
1/2 C. sugar
1tsp. vanilla
2 eggs
Preheat oven to 325.
Line muffin tin with foil liners.
Place one wafer in each liner.
Mix cream cheese, vanilla & sugar on med. speed until well blended.
Add eggs and mix well.
Pour over wafers, filling 3/4 full.
Bake for 25 minutes.
Remove from pan when cool.
Chill, then top with cherries or whatever kind of fruit you desire.
