Mocha-Chocolate Chip Cheesecake

Crust:
1-1/2 cups chocolate wafer crumbs
4 tablespoons butter, melted
1/3 cup granulated sugar
Filling:
3 (8-ounce) packages cream cheese, room temperature
1 cup granulated sugar
4 eggs, room temperature
1/3 cup whipping cream
1 tablespoon instant coffee
1 teaspoon vanilla extract
1 cup miniature chocolate chips
Preheat oven to 200 degrees. Position rack in center of oven.
Crust: Butter sides and bottom of a 9-inch springform pan.
In a medium bowl, combine chocolate wafer crumbs, butter and sugar. Pat evenly onto bottom and sides of
prepared pan. Chill crust while making filling.
Filling: In a large mixing bowl, beat cream cheese until fluffy. Beat in sugar gradually. Add eggs one at a time, beating well after each addition. Add whipping cream, coffee and vanilla and beat until coffee is dissolved and mixture is well blended, about 3 minutes.
Turn mixture into prepared crust. Top with chocolate chips and swirl through with spatula.
Set pan on baking sheet. Bake 2 hours or until toothpick inserted in center of cake comes out clean. Cool completely, then refrigerate 12 hours or overnight.
Garnish with whipped cream and chocolate-covered espresso beans.
Note: Cake will appear soft after baking is completed.
