Peanut Butter Cheesecake

18-20 Graham Crackers
1/3 cup real Butter, divided
1 1/4 cup Sugar
1 1/2 lb. Cream Cheese
3 Eggs
3/4 cup Buttermilk
2 tsp. Vanilla
1 cup Peanut Butter


Preheat oven to 375° F.

Use a springform pan to make the graham cracker crust: Melt 1 cube (1/3 cup) of real salted butter. Mix in 1/4 cup of sugar. Mix together with 1 1/4 cup of crushed graham crackers (either crush it using your Cuisinart, blender or just smash 'em in a zip-lock bag with a rolling pin, or you can cheat and by them in the box). Press onto bottom of springform pan. Bake in a 375 over for 4 to 5 minutes. Cool before filling with cheesecake mixture.

Mix together 1 1/2lb cream cheese, softened to room temperature and 1 cup of sugar. Beat in 3 eggs, 3/4 cup of buttermilk and 2 tsp. vanilla. Mix on high speed till smooth and creamy. Add in 1 cup of peanut butter and mix until blended.

Pour mixture into cooled graham cracker crust and bake in a preheated 350 degree oven for 45 minutes. Or top of cheesecake begins to crack. Let cool before serving.
