Philadelphia Macaroon Cheesecake
1 1/2 cups soft coconut macaroon cookie crumbs
2 Tbls. butter or margarine, melted
2 pkg. (8 oz. each) Philly Cream cheese, softened
12 cup sugar
1/2 tsp. vanilla
2 eggs
1 cup sweetened whipped cream
2 Tbs. strawberry jelly, melted (optional)
Preheat oven to 350 degrees F.
Mix crumbs and butter; press onto bottom and sides of greased 9-inch pie pan.
Beat cream cheese, sugar and vanilla with electric mixer on medium speed until well blended. Add eggs; mix until blended. Pour into crust.
Bake at 350 degrees for 40 minutes or until center is almost set. Cool.
Refrigerate 3 hours or overnight. Spread whipped cream over chilled cheesecake. Drizzle with jelly.
