Strawberry Sundae Cheesecake

1-1/2 cups flaked coconut
3 tablespoons butter or margarine, melted
1 package strawberry gelatin (6-oz.)
2 cups boiling water
1 pint vanilla ice cream
2 packages cream cheese (8-oz. each), softened
1 cup whipping cream
1/2 cup flaked coconut
1 package frozen sliced strawberries (16-oz.), thawed
2 teaspoons cornstarch


Combine the 1-1/2 cups coconut and the melted butter or margarine. Press into bottom of 9 x 9 x 2-inch baking pan. Bake in 325° oven for 15 minutes or till coconut is light golden brown. Cool.

Dissolve gelatin in boiling water. Add ice cream, by spoonfuls, stirring until melted. Chill mixture till partially set (mixture will be the consistency of unbeaten egg whites).

In large mixer bowl beat cream cheese till fluffy. Gradually add whipped cream, beating till smooth.
Beat in gelatin mixture. Pour into cooled crust. Sprinkle with the remaining 1/2 cup coconut.
Chill until firm, about 4 hours.

Meanwhile, prepare the strawberry sauce: Drain strawberries, reserving syrup. In small saucepan, combine reserved syrup and cornstarch; cook and stir until thickened and bubbly. Remove from heat.
Stir in berries. Cover and chill. To serve, cut cheesecake in squares; top with strawberry sauce.
