Woolworth's Cheesecake

Crust:
2-1/4 cups graham cracker crumbs
1 Tbsp. sugar
1 tsp. cinnamon
1/2 cup margarine, melted

Filling:
1 package (large size) lemon, lime or orange flavoured Jell-OŽ
1 cup boiling water
1 package (8 oz.) cream cheese, softened and cut into small cubes
2 Tbsp. lemon, lime or orange juice (depending on Jell-O flavour selected)
1 large can (13 oz.) evaporated milk
1 cup sugar


Place canned milk in freezer for 30-45 minutes.

Preheat oven to 350 degrees.

In a small bowl, combine cracker crumbs, sugar, cinnamon and melted margarine.

Stir until crumbs are well coated with margarine.

Press evenly into bottom of a 9x13" pan.

Bake for 5 minutes; cool.

In a medium bowl, combine Jell-O powder and boiling water.

Stir until dissolved.

Add cream cheese and whisk vigorously until cheese is melted into gelatin mixture.

Take evaporated milk from freezer and pour into a large mixing bowl.

Gradually add in sugar while beating at medium-high speed with electric mixer until doubled in size.

Gently and gradually (about 1/4 to 1/2 cup at a time), fold in gelatin mixture into whipped milk until no streaks appear.

Pour gently over cooled crust and chill for at least 4 hours or until set.

Garnish with fruit or additional cracker crumbs.

Serves 12.
