Millie's Best Chocolate Cake
1/2 cup butter, softened
2 cups sugar
3 large eggs
1 1/2 tsp vanilla
2 oz. unsweetened baking chocolate, melted
2 oz. semisweet chocolate, melted
1/4 tsp salt
1 T baking powder
1 7/8 cups all-purpose flour
3/8 cup cocoa powder
1 cup milk
Frosting
2 cups powdered sugar
6 Tbl butter, softened
6 Tbl cocoa powder
1 Tbl honey (or light corn syrup)
2 - 4 Tbl milk
1 tsp vanilla
Preheat oven to 350*F. Cream butter and gradually add sugar; add eggs, one at a time, and vanilla, and melted chocolates.
Sift flour, baking powder, cocoa, and salt in a large bowl, and set aside.
Mix in flour mixture and milk mixture alternately, beginning and ending with the flour. Mix well after each addition.
Pour batter into 2 buttered and floured 9 inch pans, and bake at 350*F for about 28 minutes (toothpick inserted in center should come out a little moist)
Remove from oven and let cool 10 - 15 minutes before removing from pans. Let cool completely before frosting.
Frosting - Mix all ingredients until spreading consistency. Spread between cake layers and on top and sides of cake.
