Chocolate Zucchini Cake w Cream Cheese Frosting

Chocolate Zucchini Cake

3/4 cup butter or margarine, softened
2 cups sugar
3 eggs
2 1/2 cups flour
1/2 cup unsweetened cocoa powder
1 tsp salt
1/2 cup milk
1 tsp cinnamon
2 tsp vanilla
3 cups finely shredded zucchini
1 cup semi-sweet chocolate chips
1 cup chopped nuts
Glaze or cream cheese frosting

Cream butter and suger together until fluffy. Add eggs, one at a time, beating well after each addition. Mix flour, cocoa, salt and
cinnamon together.

Add dry ingredients alternately with milk, beating until well blended. Mix in vanilla and zucchini.

Stir in chips and nuts. Pour into a greased and floured bundt pan.

Bake at 350 degrees (F) for 50 to 60 minutes or until cake tests done.

Cool for 15 minutes and remove cake from pan to finish cooling on wire rack.

Cover with glaze or frost with cream cheese frosting.

2 cups sifted powdered sugar;
3 tablespoons milk;
1 tsp vanilla

Mix powdered sugar, milk, and vanilla together, blending until smooth. Pour over chocolate zucchini cake while still warm.


(cream cheese frosting)

6 oz cream cheese, softened;
1/2 cup butter or margarine, softened;
2 tsp vanilla;
4 cups sifted powdered sugar

In a mixing bowl, beat cream cheese, butter, and vanilla until light and fluffy.

Gradually add the powdered sugar, beating until smooth. Add milk, if necessary, a teaspoon at a time, beating until smooth and creamy.

Frost cooled cake.
