PLUM COFFEE CAKE
Coffeecake:
2 cups buttermilk biscuit mix
1/2 cup sugar
1/2 cup water
2 cups sliced and pitted fresh plums
Orange sauce:
1/2 cup sugar
1 Tablespoon cornstarch
1/4 teaspoon salt
1 cup orange juice
1 Tablespoon butter or margarine
In mixing bowl, combine biscuit mix, 1/4 cup sugar and water; mix well. Pat dough into greased 8-in sq baking pan.
Cover top of dough with sliced plums; sprinkle remaining 1/4 cup sugar over top.
In small saucepan, blend together 1/2 cup sugar, cornstarch and salt. Add orange juice; cook over low heat, stirring constantly, until mixture is clear, about 5 minutes. Remove from heat; stir in butter. Pour 1/2 the sauce over top of plums and dough. Bake at 425 degrees for 30 minutes. Serve warm with remaining orange sauce. Serves 6.
