Easy Apple Cream Cheese Coffee Cake

1 (3 oz.) pkg. cream cheese, softened
1/4 c. butter, softened
2 c. Bisquick
1/3 c. milk
Cream Cheese Filling:
1 (8 oz.) pkg. cream cheese, softened
1/4 c. sugar
1 tsp. lemon rind
2 tsp. lemon juice

Topping:
2 Tbsp. sugar
1/2 tsp. cinnamon
apple pie filling


Using pastry cutter, cut cream cheese and butter into Bisquick, then add milk. Mix like pie crust. Turn onto flat surface coated with Bisquick. Knead 8 to 10 minutes. Roll into 8 x 12-inch rectangle. Place on lightly greased cookie sheet.

Mix ingredients in filling well. Spread down center of rectangle. Make cuts 2 1/2-inches long at 1-inch intervals along longest edge of rectangle. Fold strips over filling, overlapping slightly.

Mix the sugar and cinnamon and sprinkle over top. Bake uncovered 12 to 15 minutes at 425 degrees until golden brown. Cool completely. Spoon apple pie filling or filling of your choice over center. Drizzle with glaze and sprinkle with chopped walnuts as desired.




Apple Coffee Cake

2 c. sugar
2 eggs
1 tsp. vanilla
1 1/2 c. oil
3 c. flour
1 tsp. baking soda
1 tsp. cinnamon
1/2 tsp. salt
1 c. chopped nuts (optional)
1 can apple pie filling
Icing:
1 c. powdered sugar
2 Tbsp. milk


Preheat oven to 350 degrees. Grease and flour 9 x 13-inch pan.

Beat together sugar, eggs and vanilla. Add oil and mix well. Stir in flour, baking soda, cinnamon and salt until well mixed. Add nuts (if desired) and apple pie filling. Mix thoroughly and pour into pan. Bake at 350 degrees for 50 to 60 minutes.

Mix powdered sugar and milk; pour icing over hot cake. Serves 15 to 20.
