Cheese Apricot Coffee Cake

Crust:
3 cups homemade or commercial biscuit mix
2 Tbsp brown sugar, packed
1/4 cup margarine or butter, melted
1/2 cup milk

Cheese Filling:
1 cup ricotta cheese
1 3-oz package cream cheese
1/3 cup sugar
2 eggs 1 tsp vanilla 1 cup apricot preserves


Make crust by mixing all ingredients together; stir vigorously to make a soft dough, then turn out onto floured surface and knead about 15 times. Pat evenly over bottom and up sides of a 9 inch cake pan. Refrigerate until ready to use.

Make filling by beating cheeses, sugar, eggs, and vanilla until smooth. Pour into crust and bake in preheated 350 degree oven 30 to 35 minutes or until filling is "set" in the center.
Remove from oven and drizzle apricot preserves over top. Cool 20 minutes before serving
