Rhubarb Sour Cream Coffee Cake

1/2 cup butter
1 1/2 cup sugar
1 teaspoon vanilla extract
2 1/3 cup flour
1 teaspoon baking soda
4 cups chopped rhubarb
1 cups sour cream


Preheat oven to 350 degrees. Beat butter and sugar until fluffy. Add remaining ingredients. Mix this stiff batter with your hands and pat into a greased 9x13-inch baking dish. Sprinkle lightly with nutmeg. Bake 40
minutes. Serve warm, topped with whipped cream. Serves 12.
