Little Chocolate Mud Cakes
300g (10 oz.) dark chocolate, chopped
300g (10 oz.) butter
5 eggs
½ c. sugar
¾ c. self-raising (self-rising) flour, sifted
Preheat oven to 160 degreesC (315 degreesF).
Line patty tins with paper-liners or grease.
Place chocolate and butter in a saucepan over low heat and stir until smooth, then set aside.
Place eggs and sugar in a bowl, and beat until light and fluffy (about 6 minutes).
Fold egg mixture through flour and chocolate mixture.
Pour mixture into 12 paper-lined or well-greased patty tins and bake in a preheated 160 degreesC (315 degreesF) oven for 25 minutes or until cakes feel firm to touch.
Serve cakes warm with a sprinkling of good-quality cocoa.
Makes 12.
Note: this cake can also be cooked in a base-lined and greased 23cm (9 inch) round cake tin. Bake at 160 degreeC (315 degreeF) for 45 minutes or until cake feels firm to touch.
