Quick Chocolate Cupcakes

1 1/2 cups Gold MedalŪ all-purpose flour
3/4 cup sugar
1/4 cup Hershey'sŪ cocoa
1 teaspoon baking soda
1/2 teaspoon salt
1 cup water
1/4 cup vegetable oil
1 tablespoon white vinegar
1 teaspoon vanilla extract


Preheat oven to 375 F. Line muffin cups (2-1/2-inches in diameter) with paper baking cups.

Mix flour, sugar, cocoa, baking soda and salt. Add water, oil, vinegar and vanilla; beat with whisk or spoon until batter is well blended. Fill muffin cups 2/3 full.

Bake 16 to 18 minutes. Remove from pan to wire rack. Cool completely. Frost with "Perfectly Chocolate" Chocolate Frosting below.


Perfectly Chocolate Chocolate Frosting:

Melt 1/2 cup butter or margarine; stir in 2/3 cup Hershey's cocoa. Alternately add 3 cups powdered sugar and 1/3 cup milk, beating on medium speed to spreading consistency. Add more milk, if needed. Add 1 teaspoon vanilla. Makes about 2 cups
