Cupcakes St Patricks Day

St. Patrick's Day Cupcakes

1 3/4 cups flour
1 box instant pistachio pudding mix
2/3 cup sugar
1/2 cup salt
3/4 cup chocolate chips
2 1/2 tsp baking powder

Mix the above ingredients until blended together. In small bowl combine the following:

2 beaten eggs
1/2 cup oil
1 1/4 cups milk
1 tsp. vanilla
Stir into flour mixture until combined. Fill muffin tin cups 2/3 cupp. Bake 375* 18-20 minutes. Makes about 18 cupcakes. Cool and frost with cream cheese frosting and sprinkle with green sugar.

Cream Cheese Frosting
1/4 cup butter/margarine, softened
1-8 oz. pkg. cream cheese, softened
1-1 lb. pkg. powdered sugar
2 tsp. vanilla extract

Combine all ingredients, mixing until smooth. Enough for 1-9" layer cake. Extra can be refrigerated for another
time.
