Flourless Marble Cake

Vanilla Batter:
8 oz. cream cheese, room temp.
2/3 cup sugar
1 egg
1 tsp. vanilla

Chocolate Batter:
10 oz. bittersweet chocolate
6 oz. unsalted butter
1/3 cup sugar
3 eggs
1 tbsp. rum or espresso
1 tsp. vanilla


Preheat oven to 300 degrees.

Beat cream cheese and sugar until no lumps. Add 1 egg and vanilla and beat until just combined. Set aside. (not in the frig.)

Melt butter and chocolate in double boiler. Set aside to cool.

Cream eggs and sugar with rum and vanilla until pale and thick.

Grease a 9-1/2" cake pan and line with parchment.

Spread half the chocolate batter as base in pan and then alternately add spoonfuls of the vanilla and chocolate batters. Swirl together with tip of knife to marblize.

Bake for 40 - 42 minutes (do not overbake) and allow to cool on rack for 1-1/2 hours. Tap sides of cake pan to loosen sides (or use a knife) and tip out onto plate (bottom side up). Remove parchment and sprinkle cocoa generously over the bottom (to prevent sticking) and flip bottom side down onto a plate (so right side is up again). Cover and chill at least 4 hours or overnight.
