Boiled Icing
4 egg yolks, beaten
1/4 cup white syrup
2 cups sugar
3/4 cup water
1 tsp. lemon or orange extract
Combine sugar, syrup and water in a double boiler until it spins a thread. Allow to cool, then pour over the egg yolks and beat. Add extract and serve on cake.
