Brown Sugar Frosting
2 egg whites
1 1/2 cups dark brown sugar, firmly packed
1/3 cup water
1 tsp. vanilla
Mix first three ingredients in the top of a double boiler until smooth. Place over briskly boiling water and beat vigorously for seven minutes by hand or for 4 minutes with an electric mixer. The frosting should look fluffy and hold a soft shape.
Remove from heat and stir in vanilla. Continue beating until it holds a peak when you lift the beater.
Spread between layers and around sides of cake. Makes enough to frost 2 - 9 inch cake layers.
Option: To make seafoam frosting, use only 1 cup dark brown sugar and 1/2 cup granulated sugar.
