CARAMEL ICING

2 c. brown sugar
1/8 tsp. soda
1 tsp. vanilla
1 c. sugar
3/4 c. cream
1 egg white

Combine sugar, soda and cream. Cook, stirring constantly, until a small amount forms a soft ball when dropped into cold water. Cool to lukewarm without stirring. Beat until creamy. Add unbeaten egg white and beat until thick enough to spread. Will frost three 8-inch layers.


EASY CARAMEL ICING

1 box light brown sugar
2 c. sugar
1 stick oleo
1 c. milk

Place all in large pot and boil 2 minutes. Beat until
consistent enough to spread on cake.
