Catterpillar Cake Icing

16 ounces (1 box) confectioners' sugar
5 tablespoons meringue powder
yellow and blue food coloring


Combine confectioners' sugar, meringue powder, and 7 tablespoons water in the bowl of an electric mixer fitted wit the paddle attachment. Mix on low speed until light and fluffy and mixture comes up sides of the bowl, about 7 minutes.

Divide the icing evenly among three bowls, and cover them tightly to keep them from dying. Using food coloring, tint one bowl of icing blue and one yellow; leave the remaining bowl white.
