Reflective Chocolate Glaze
1 cup sugar
1 cup evaporated milk
4 squares unsweetened chocolate
1/2 cup butter, set at room temp
1 tsp. rum or vanilla extract

Combine sugar and cream in a saucepan and bring to a boil over medium heat; stirring constantly. Reduce heat and simmer for about 6 minutes. Remove from burner.

Add chocolate and blend in until completely melted. Blend in butter and extract.

Pour quickly over completely cooled cake. I usually cool my cake in the frig and then pour over.

Makes about 2 cups.


Chocolate Glaze

3 squares semi-sweet chocolate
3 T. water
1 T. Butter
1 cup Sifted Confectioners sugar
dash of salt
1/2 tsp. vanilla

Combine sugar and salt in a bowl; set aside.

Place chocolate, water, and butter in a saucepan. Stir constantly over low heat until smooth. Remove from heat.

Gradually add chocolate mixture to sugar and salt mixture, add vanilla.

For a thinner glaze add a small amount of hot water.

If a thicker glaze is desired just let cool till desired consistancy is achieved.

Makes 3/4 of a cup.
