Becky's Fruit Cake

1 1/2 cups butter -- (room temp).
2 cups sugar
6 eggs -- lightly beaten
1 tablespoon grated orange rind
1 teaspoon grated lemon rind
3 1/2 cups sifted flour
1 teaspoon baking powder
1 cup seedless raisins
1 1/2 cups currants – plumped-To do this, wash them in warm water, drain, and spread them out on an oven tray, cover, and heat in a slow oven until wrinkles disappear.
1/2 cup citron, cut finely


Preheat oven to a slow 300º F Line a 9" tube Pan with 2 thicknesses of greased paper.

Cream the butter and add the sugar gradually, creaming thoroughly. Add the eggs and the grated fruit rinds.
Sift the flour and the baking powder together and add to the creamed mixture. Stir in the fruits, after the currants have been plumped. Mix thoroughly.

Pour the batter into the prepared cake pan and bake in a slow oven for about 2 hours.
