CASSATA ALLA SICILIANA
1 9x5x3 inch loaf pound cake
2/3 cup orange juice
1/4 cup rum
1 pound riccota cheese
2/3 cups toasted chopped filberts, divided
1/4 cup sugar
1/4 cup mini chocolate chips
1/4 cup mixed candied fruits, chopped.
Split cake horizontally into 3 layers. Mix orange juice and rum. Combine 3 tablespoons of juice with cheese, sugar,
1/3 cup filberts, chocolate chips, and candied fruit.
