Becky's fruit cake

Preheat oven to 300*F
Line a 9" tube pan with 2 thicknesses of heavy-weight greased paper.

Ingredients:
1 1/2 cups butter
2 cups sugar
6 eggs, beaten
1 tablespoon grated orange rind
1 teaspoon grated lemon rind
3 1/2 cups sifted flour
1 teaspoon baking powder
1 cup seedless raisins
1 1/2 cups currants
1/2 cup citron, cut fine

Method:
Cream the butter and add sugar gradually, creaming thoroughly.

Add the eggs and grated fruit rinds.

Sift the flour and baking powder together and add to the creamed mixture.

Stir in the fruits after the currants have been plumped (to do this, wash them in warm water, drain, and spread out
in a pan, cover, and heat in a slow oven until the wrinkles
disappear)

Pour the batter into the prepared pan.

Bake in oven for about 2 hours.
