Individual Fruitcakes

1/2 c shortening
1 c brown sugar
3 eggs
2 c flour
1 tsp baking soda
1 c sour cream
1 lb date,s chopped
1 lb raisins, chopped
3/4 lb candied pineapple, chopped
3/4 lb candied cherries, cut in half (grandma would do half green and half red)
1 lb pecans, chopped
1 lb walnuts, chopped
3/4 c white Karo syrup or maple syrup
3/4 cup water


Oven preheat to 300 degrees.

Cream shortening and brown sugar. Add eggs and beat well. Sift 2 cups flour with 1 tsp soda and add to the first mixture alternately with sour cream.

Mix dates, 1 raisins, pineapple, candied cherries, pecans and walnuts. Add to batter and mix well.

Put into small paper baking cups, set close together on a cookie sheet; bake about 50 minutes. While baking keep a pan of water on top shelf of oven to keep cakes moist. After baking, glaze with Karo syrup and water boiled together about 3 minutes, or use maple syrup. Return to oven and bake 5 minutes after glazing.

Note: Make sure to keep refilling the pan with hot water, to keep the cakes moist.
