Walnut Delight Cake

1 yellow cake mix, 2-layer size
1 c chopped Diamond Walnuts
4 eggs, separated
pinch salt
1 c sugar
1/4 tsp salt
1/2 c sugar
2 tbsp orange flavored liqueur
2 tbsp orange juice
1 tsp grated lemon peel
1 1/2 c whipping cream
1 tsp vanilla
Diamond walnut pieces


Prepare cake mix according to package. Spoon into 2 greased and floured 9 inch layer cake pans. Sprinkle walnuts evenly over both layers.

Beat egg whites with pinch of salt until foamy; add 1 cup sugar gradually and beat until stiff. (This should be a hard meringue as for a torte, not a soft meriangue as for a pie)

Spread evenly over both layers to within 1 inch of the edge of the pans, but do not seal.

Bake at 350 for 35 to 40 minutes (this is 10 minutes more than the package called for)
Cool in pans for 5 minutes, then turn out to wire rack to complete cooling.

Filling: Beat egg yolks and 1/4 tsp salt until thick and lemon colored. Gradually beat in the 1/2 c sugar and continue beating until very thick. Stir in orange flavored liqueur, orange juice and peel. Cook over hot water, stirring constantly, 5 to 8 minutes or until thick. Cool.

With meringue side up, put layers together with filling.

Frosting: Whip cream with vanilla until stiff. Spread and swirl over cake and decorate with walnut pieces.

Makes one 9-inch layer cake.

Measuring hint: If recipe calls for 1 c chopped nuts, measure after chopping. If recipe calls for 1 c nuts, chopped, measure before chopping.
