Black Walnut Loaf Cake
2 cups flour
2 tsp. Baking powder
1/2 tsp. salt
1 cup shortening
1/2 cup chopped Black Walnut
4 eggs, separated
1 1/4 cup sugar
1 tsp. almond extract
Preheat oven to 350 degrees. Grease bottom of a loaf pan and flour lightly.
Measure flour, baking powder and salt into sifter. Cream shortening until soft in med. size bowl. Sift and add dry ingredients. Blend in walnuts. Beat egg yolks in second med size bowl until thick and lemon colored. Stir in sugar and almond flavoring. Add to shortening and flour mixture. Beat egg whites until stiff but not dry, fold into egg flour mixture.
Pour into prepared loaf pan. Let stand at room temp. for 20 min. to help prevent cracking of top during baking. Bake at 350 degrees for 1 hour or until cake tester inserted in the center come out clean. Cool cake in pan for 5 min. Loosen around edges with a knife. Turn onto cake rack and cool
