Midnight Chocolate Cake
Recipe I
1 whole large egg
1 c. buttermilk
1 c. salad oil
1 tsp. vanilla
2 c. flour
2 c. sugar
1/2 c. Hershey's cocoa
1 Tbsp. baking soda
1/2 tsp. salt
1 c. boiling water
Preheat oven to 325° F and grease and flour a 13x9-inch pan.
Combine egg, buttermilk, salad oil and vanilla; mix slightly.
Add remaining ingredients; mix slightly.
Then add 1 cup boiling water; beat well.
Pour into prepared pan.
Bake for 55 to 60 minutes.
Recipe II
2 1/2 c. flour
1 2/3 c. sugar
2/3 c. cocoa
1 1/4 tsp. baking soda
1 tsp. salt
1/4 tsp. baking powder
1 1/4 c. water
3/4 c. shortening
2 eggs
1 tsp. vanilla
Preheat oven to 350° F and grease baking pan (s).
Put flour, sugar, baking soda, salt, baking powder, shortening, eggs and vanilla in a large bowl.
In a smaller bowl, mix cocoa with 1 1/4 cups boiling water; add this to dry ingredients and mix with electric mixer.
Baking times: Tube pan: bake for 45 to 50 minutes; Layer cake pans: bake for 30 to 35 minutes.
Recipe III
2 c. flour
2 c. sugar
1 tsp. baking powder
2 tsp. baking soda
3/4 c. cocoa
3/4 c. melted oil
1 c. hot black coffee
2 eggs
1 c. milk
1 tsp. vanilla
Preheat oven to 350° F.
Sift flour, sugar, baking powder, baking soda and cocoa; set aside.
Add oil, coffee, eggs, milk and vanilla.
Beat well, batter will be thin.
Pour into 2 (8 or 9-inch) pans or 1 (9 x 13-inch) pan.
Bake for 30 to 35 minutes
