Chocolate Whipped Cream Cake

1 Prepared Angel Food Cake
1 (6 oz.) pkg. chocolate chips
pinch of salt
2 Tablespoons sugar
1 teaspoon vanilla
1 pt. whipped cream
3/4 cup chopped, toasted pecans


Melt chocolate chips in double boiler over simmering water. Cool. Separate eggs.

In small bowl, beat egg yolks and add salt. Combine egg yolks with cooled chocolate chips. Set aside. Beat egg whites until almost stiff, then add sugar, and vanilla and beat until stiff. Beat whipping cream until right consistency. By hand, fold chocolate chip/egg yolk mixture into egg whites. Then fold in nuts and whipped cream.

Break up Angel Food cake into bite size pieces. Starting with cake pieces, in two layers, alternate with chocolate mixture, ending with chocolate mixture covering and hiding pieces of cake. Cut into squares when ready to serve. Cover tightly and keep refrigerated. Enjoy!
