Buttermilk Poundcake

1 cup margarine
2 3/4 c. sugar
1 cup buttermilk
1 T. grated lemon peel and/or 1 t. vanilla
4 eggs
3 cups sifted all purpose flour
1/4 t. soda
1/2 c. chopped nuts

Sift flour and soda together. Cream sugar and margarine until well blended. Add eggs, one at a time, beating well
on high speed after each addition until light and fluffy.

Using low speed, mix in lemon rind or add vanilla to buttermilk and add dry ingredients alternately with milk to
creamed mixture. Mix only until all flour is moistened. Pour into greased and floured tube or Bundt pan and bake at
350 for 1 hour and 10 minutes.
