CRAISIN POUND CAKE

1 cup butter, softened
1 cup sugar
2 eggs
2 teaspoons vanilla
1/2 cup sour cream
1-1/2 cups CRAISINS® Sweetened Dried Cranberries
2-1/2 cups flour
1/2 teaspoon baking powder
3/4 cup coarsely chopped pecans or walnuts (optional)

DIRECTIONS:

Preheat oven to 350° F. Lightly grease a 8 1/2 x 4 1/14 x 2-inch loaf pan. Using an electric mixer, beat butter and
sugar together in a medium mixing bowl, until light and fluffy. Add eggs, vanilla, and sour cream, mixing thoroughly.

Mix in dried cranberries and nuts. Combine flour and baking powder in a separate bowl. Gradually add to cranberry mixture, mixing well. Pour batter into prepared pan. Bake for 1 hour 15 minutes or until a toothpick inserted into the center of cake comes out clean. Remove from pan; let cool completely on a wire rack. Makes 1 large loaf.
