Old-Fashioned Poundcake with Chocolate Chips

2 cups flour
2 cups sugar
2 sticks (8 ounces total) butter, softened
1 1/4 teaspoon vanilla
5 eggs
10-12 ounces good quality chocolate chips


Prepare pan. You may use a traditional loaf pan, or this works in a Bundt(r) pan as well. Grease and flour the pan, set aside. Preheat oven to 300 degrees Fahrenheit.

Cream the sugar and the butter together. Add eggs, beating a bit after each addition to be sure to get a good emulsion. Add the flour in bits, for example, 1/4 or 1/2 cup at a time to be sure it is well incorporated. Add vanilla, beat smooth. Stir in chocolate chips. They will probably settle to the lower part during baking, but this is fine one you upend the cake to serve.

Pour into prepared pan. Do not shake the pan to settle the batter, just put it into the oven.
Bake at 300 degrees Fahrenheit for 1 hour. Use a toothpick to check to see if done, you may need to add 10 minutes or so.
