Pound Cake: Red Velvet Pound Cake

Red Velvet Pound Cake

11/2 cups (3 sticks) butter, softened
3 cups sugar
6 eggs
1 tsp. vanilla
1 (1 ounce) bottle red food coloring
3 cups flour
1 tsp. baking soda
1 tsp. salt
1 cup buttermilk
Cream Cheese Frosting


Preheat oven to 325 degrees F. and grease and flour a tube pan.

Cream butter, and sugar in mixing bowl till light and fluffy Add eggs one at a time, beating well after each addition. Beat in food coloring, and vanilla

Mix the flour ,soda, and salt together. Add to the creamed mixture, alternately with the buttermilk. Beating well after each addition.

Pour into tube pan. Bake at 325º for 1 hour, and 20 minutes, or until cake tests done. Cool in the pan, 10- 15 minutes. Invert on wire rack to cool completely. Frost with cream cheese frosting.


Cream cheese Frosting:
6 ounces cream cheese, softened
1/2 cup butter softened ( 1 stick)
1 tsp. vanilla
1 (1pound) pkg. powdered sugar
1 Tbs. milk


Beat the cream cheese and butter in a bowl until well blended. Add the vanilla and powdered sugar, beat until till smooth. Add enough of the milk to make the frosting of spreading consistency.
