Rum Butter Pound Cake
1 (17 oz.) box butter recipe cake mix
1 (3 oz.) vanilla instant pudding
3/4 cup oil
3/4 cup water
4 eggs
1/4 cup chopped pecans
Mix cake mix, instant pudding, oil, water and eggs together. Beat at medium speed, till well blended.
Grease and lightly flour a 10inch tube or bundt pan. Sprinkle the chopped pecans in the bottom of pan. Add cake batter over the pecans. Bake in a preheated 350º oven 45 minutes, or until tester comes out clean.
Icing:
1 cup powdered sugar
1/2 stick butter
3 T water
1 T rum flavoring
1/2 cup chopped pecans
Combine sugar, water, and butter in a saucepan. When mixture is bubbly and sugar is dissolved, add rum flavoring and pecans. As soon as cake is removed from oven, pour hot mixture over the cake. Let set about 10 minutes in the pan. Turn out on waxed paper lined plate.
