Pound Cake: Velvet Poundcake

Velvet Poundcake

14 T butter
3 oz pkg cream cheese
1/2 t salt
1 1/2 c sugar
1 3/4 c flour
1 t baking powder
2 t vanilla
1 t almond extract
5 eggs


Beat together the butter and cream cheese, at high speed, until light and fluffy. Add salt, sugar, flour and baking powder and mix to combine; the batter will be stiff. Add the extracts and 1 egg. Beat well. Continue to add the eggs, one at a time, beating for at least 1 minute after each egg is added. The finished batter should be extremely light and fluffy. Spoon batter into a greased 9x5 loaf pan or into a small tube or bundt pan. Bake in preheated oven or 55-60 minutes, or until cake tester comes out clean. Remove from oven and after 5 minutes, turn it out of pan to cool on wire rack.
