Pound Cake by Karen

3 cups sifted flour 
1/4 tsp. baking soda 
1 cup butter or margarine, softened 
1 cup cottage cheese, sieved 
2 cups sugar 
6 eggs, separated 
1 tsp. grated orange rind 
1 tsp. vanilla 

Preheat oven to 300. Grease a 9" Bundt pan. 
Sift flour and baking soda and set aside. 
Beat butter and cottage chese with electric mixer until creamy and smooth. Slowly beat in sugar until fluffy.
Beat in egg yolks, one at a time. Beat in orange rind, vanilla and flour mixture until well blended. Beat egg
whites with electric mixer until stiff but not dry. Fold into cake batter. Spoon into prepared pan, smoothing
top evenly. 
Bake for 1 & 1/2 hours or until top spring back. 
Cool in pan 10 minutes. Turn out onto plate; cool completely. Sprinkle with 10 X sugar, if desired.
