Cream Cheese Cherry Pound Cake

1 cup butter or margarine
1 large pkg cream cheese (8 oz)
1 1/2 cups w. sugar
1 1/2 tsp vanilla
4 eggs
1 cup chopped red and green cherries (well drained)
2 cups flour
1/4 cup flour to coat the chopped cherries
3 teas. baking powder


Grease and flour a tube pan. Preheat oven to 325 degrees.

Blend butter, sugar, cream cheese and vanilla. Add 4 eggs, one at a time, beat well after each egg. Gradually add flour and baking powder. Fold floured cherries into batter.

Bake at 325 degrees for 1 hr - 20 mins. Cool 5 mins and remove from pan.


Cream Cheese Icing:
1 small pk cream cheese (3 oz)
1/2 cup soft butter or margarine (1 stick)
3 cups powdered sugar
1 tsp vanilla
a couple of drops of red food coloring or cherry juice


Blend well and spread over the cake. Some green cherries split into half to shape like holly leaves and a half of a red cherry to look like a holly berry makes this cake very festive when put in the icing around the top of the cake.
