Butterscotch Pudding Cake

BUTTERSCOTCH PUDDING CAKE

Ingredients:
1 & 1/4 cups self-raising flour
1/4 cup firmly packed, soft brown sugar
1/3 cup butter - melted
1/3 cup milk
1 egg - lightly beaten

Sauce:
3/4 cup firmly packed, soft brown sugar
1 & 1/2 cups boiling water
3 tablespoons butter - chopped
Preheat oven to 180*C (350*F)


Lightly grease a 2 litre (2 quart) deep ovenproof dish.

Method~
1...Sift the flour into a large bowl, add the sugar and stir well. Make a well in the centre of the dry ingredients.

Mix together the melted butter, milk and beaten egg.

Pour into the well. Stir until combined. Do not over beat.

Spread mixture evenly into prepared dish.


To make the sauce:

2...Sprinkle brown sugar over the top of the pudding mixture.

Combine the water and butter. Stir until the butter has completely melted.

Pour gently, over the back of a spoon, onto the pudding mixture.

3...Bake in pre-heated oven for 35 minutes, or until a skewer comes out clean when inserted into the centre of cake only.
