Strawberry Cake

Miniature Marshmallows
2 (10 oz.) packages frozen strawberries, fully thawed
2 cups sugar, divided
2 (3 oz) packages strawberry Jello
1 stick butter, softened
3 eggs
2 1/4 cups flour
3 tsp. baking powder
1/2 tsp. salt
1 tsp. vanilla
1 cup milk

Icing:
1 egg white
1 cup sugar
1 cup sliced fresh strawberries


Grease and flour a 9X13 baking dish (or spray with Pam) Cover the bottom of the pan with miniature marshmallows.

Mix strawberries with 1/2 cup of sugar and 1 package of strawberry Jello and set aside.

Cream 1 1/2 cups of sugar and butter. Add the eggs and mix.

Mix the flour with the baking powder and salt. Add vanilla to milk. Add the flour alternately with the milk to the sugar and egg mixture and mix. Add a box of strawberry Jello to the batter. Pour the batter over the marshmallows. Spoon the strawberries over
the batter.

Bake at 350 degrees for 40-45 minutes or until center is done. (Stick a toothpick down into the center of the cake. If it has no cake batter on it when you pull it out then the cake is done.)


Mix icing ingredients and beat for 10 minutes with an electric mixer. Do not beat less than 10 minutes or the consistency of the icing will not be as it should be.
