Shortcake: Buttermilk Shortcake

Buttermilk Shortcake

4 cups flour
2 Tbs baking powder
1 tsp baking soda
1 cup sugar
1 tsp salt
1 cup shortening
2 cups sour milk or buttermilk


Mix the dry ingredients and the shortening till the mixture is crumbly. Add the sour milk and mix just enough to make sure the dry part is moistened. Spread the dough out in a greased cake pan - a 9"x13", two 9"x9" square or round, or 9" springforms or 10"pie plates. (Or halve the recipe to make a single cake). Sprinkle white sugar or coarse granulated sugar over top of the cake(s) and bake in a 400° oven about 20 to 25 minutes just until a toothpick inserted in the centre comes out clean.

Serve warm, split and buttered (or not), and smothered with berries or fruit, with or without whipped cream.
