St. Louis Gooey Butter Cake

1 cup all-purpose flour
3 tablespoons sugar
1/3 cup butter
1 1/4 cups sugar
3/4 cup butter
1/4 cup light-colored corn syrup
1 egg
1 cup all-purpose flour
2/3 cup evaporated milk
Sifted powdered sugar(optional)
Fresh fruit (optional)


Preheat oven to 350° F

In a large bowl, mix 1 cup flour and 3 tablespoons sugar. Cut in 1/3 cup butter till mixture resembles fine crumbs and starts to cling. Pat into bottom of 9 x 9 x 2-inch baking pan.

For Filling: In a large mixing bowl, beat the 1 1/4 cups sugar and 3/4 cup butter till combined. Beat in corn syrup and egg till just combined.

Add the 1 cup flour and evaporated milk alternately to the butter mixture, beating till just combined (the batter will appear to be slightly curdled).

Pour into the crust-lined baking pan. Bake in a 350 degree oven for about 35 minutes or till cake is nearly firm when you shake it. Cool completely in pan on wire rack.

If you like, sprinkle with powdered sugar and serve with fresh fruit.
