Black Coffee Torte

To quote: "This cake is damp, rich and overcome with dark roasted coffee flavor. No icing is needed, but a piping of whipped cream probably would not go unappreciated."

12 tbsp. (1 1/2 sticks) unsalted butter
1 2/3 cups ground walnuts (8 oz.)
2 tbsp. instant coffee powder (espresso is best)
1 cup sugar
3 eggs
1/4 cup dry bread crumbs
pinch of salt
1 tsp. vanilla extract
2 tbsp. coffee-flavored liqueur (ie Kahlua) or rum or brandy


Preheat oven to 375° F. (190° C.) Spray bottom and sides of an 8-inch layer pan with oil, line bottom with parchment or waxed paper, spray again, and dust with flour.

In a large heavy saucepan over medium heat, begin melting butter. After about 30 seconds, add ground walnuts and stir til butter is completely melted and walnuts are lightly toasted. Remove from heat.

Mix in coffee and sugar. Add rest of ingredients and stir til blended. Pour batter into prepared pan and bake 25 minutes, or until tester inserted in center of cake comes out with damp crumb. Cool in pan on rack for 20 minutes. Run a knife around edge, cover with waxed paper, and invert onto plate. Peel off lining paper and invert again (no waxed paper should remain). Cool about 15 minutes more.
