Torte: Surprise Chocolate Torte

Surprise Chocolate Torte

8 eggs, separated
1 tsp vanilla
1 1/4 cups sifted powdered sugar
1/2 cup cocoa powder
dash salt

Coffee Cream Filling:
2 cups heavy/whipping cream
3 Tbsp sugar
1 Tbsp instant coffee powder
Chocolate curls (optional garnish)


For torte: Preheat oven to 325. Beat yolks with vanilla in small bowl until thick, about 5 minutes. Sift powdered sugar and cocoa into large bowl. Add yolks and beat 1 minute.

In a separate bowl, beat egg whites with salt until stiff peaks form. Gently but thoroughly fold into cocoa mixture. Turn into 9" springform pan (ungreased) and bake 45 to 50 minutes. Remove from oven to cool. Center of torte will fall -- don't worry about it.

For filling: Softly whip cream. Add sugar and instant coffee and continue beating until stiff.
To serve: Run dull knife around sides of pan to loosen torte before removing rim. Spoon whipped cream mixture into fallen center of torte and decorate with optional chocolate curls.

NOTE: You can bake the torte ahead and refrigerate, covered with cling wrap. Make sure it is completely cooled before refrigerating. You can whip the cream before guests arrive and add it to the unmolded cake. If you're using chocolate curls to garnish, add them just prior to service. The torte has an angel-food texture, so it's best to cut it with a serrated knife.
