Salmon Pie (Pate au Saumon)

1 double crust pie shell (bottom and top)
Some chopped onion, celery and green pepper,
1 large can (10oz. salmon) flaked and drained reserving the liquid for the White sauce.
Some mashed potatoes


Saute the chopped onion, chopped celery and chopped green pepper and mix with a 10oz. can of salmon drained. Mix the together with seasoned mashed potatoes. Pile into pie shell and place the other crust on top. Bake at 350F until golden brown and hot. Serve this with the following Egg Sauce on top.


Egg Sauce:
Hard boiled eggs in chunks about 5-6 or as you like
3 Tbsp. butter
3 tbsp. flour
Milk and the juice from salmon to make 4 cups
Salt and pepper
Garlic powder
a bit of Seasoned salt


Melt the butter and mix with the flour, add the milk/salmon juice a little at a time, stirring, add the seasonings and the chopped eggs. Serve over the pie.
