Almond Anise Candy

vegetable oil
1 1/4 cups sugar
3 Tbsp water
1 Tbsp fresh lemon juice
1 cup whole almonds, toasted
1 cup whole blanched almonds, toasted
1/2 tsp anise seed, crushed


Line 2 cookie sheets with foil and brush with oil.

Stir sugar, water and lemon juice in heavy saucepan over low heat until sugar dissolves. Increase heat and boil, without stirring, until syrup turns deep caramel color, brushing down sides of pan with pastry brush dipped in water, for about 10 minutes.

Mix in almonds and seeds.

Working quickly, drop mounds onto prepared sheets. Cool completely, then peel candies completely from foil.

Store between waxed paper in airtight container.
